One of the most outstanding and exciting coffees we offer, this coffee from the Matagalpa region of Nicaragua is a truly exceptional coffee, especially in darker roasts. For that reason, we recommend this coffee to be roasted at the Vienna level or darker.
The flavor profile of red apple, raisin, and toffee really begin to develop in the dark roasts, although they are present in smaller amounts at Full City and below. For those who want to want the most flavor, richness, and boldness out of their cup of coffee, this one's for you.

Roaster's Advice: Oil begins to build up on the coffee bean at this level. We recommend thoroughly cleaning your grinder before your first order and frequently thereafter in order to avoid clogging if you enjoy darker coffees.
